Ingredients:

Taco Seasoning…

  • 3/4 tsp salt
  • 1/2 tsp ground black pepper
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1/2 Tbs cumin
  • 1 Tbs chili powder
  • 1/4 tsp cayenne pepper

Keto Taco Casserole…

  • 1 lb. ground beef
  • 1/2 cup heavy cream
  • 4 eggs
  • 2 Tbs sour cream
  • 8 oz. shredded Monterey jack cheese, divided
  • 1/4 cup sliced pickled jalapenos
  • 1/2 Tbs minced garlic
  • 3 green onions, chopped
  • 1 10oz. can rotel, drained
  • 1/4 cup sliced black olives

Directions:

  1. Pre-heat oven to 350 degrees F.
  2. Combine taco seasoning ingredients in bowl; mix well.
  3. Split seasoning in half and set aside.
  4. Skillet, med-high, add ground beef.
  5. Drain and return to heat.
  6. Add Rotel to beef.
  7. Add garlic, onions, and half of taco seasoning.
  8. Stir and cook for 2-3 minutes.
  9. Remove from heat; set aside.
  10. Add eggs to mixing bowl, mix with remainder of seasoning.
  11. Mix in sour cream and heavy cream.
  12. Stir in 4 oz. Moneteray Jack cheese.
  13. Add beef mixture to 8″x8″ or 7″x9″ baking dish.
  14. Pour egg and cream mix over top and combine all.
  15. Add another 4 oz. Monteray jack cheese.
  16. Sprinkle olives and jalapenos on top.
  17. Place in center of heated oven for approx. 30 minutes.
  18. Remove and let set for 10 minutes.
  19. Serve and enjoy!
