Ingredients:

  • Avocado oil
  • ½ onion, chopped
  • 6 cloves garlic, minced
  • ½ can full tomatoes
  • ½ cup beef broth or chicken broth
  • 2-3 Chipotle chilies in adobo sauce
  • 1 tsp. Cumin
  • 1lb. Ground beef
  • Salt (to taste)
  • Cilantro (to taste)
  • ¾ cup Monterey Jack cheese, shredded
  • Deli sliced chicken
  • ½ cup enchilada sauce

Directions:

  1. Sauté the chopped onion in avocado oil over medium heat until softened. Add the minced garlic and continue to saute until fragrant. Set aside in a small bowl.
  2. In the same pan, add the crushed tomatoes, beef broth, and chipotle chilies in adobo sauce. Season with cumin and bring to a simmer. Let the flavors meld together until bubbly. Remove from heat and transfer to a blender.
