This recipe is keto-friendly and makes a cheesy, gooey, and spicy enchilada dish.


  • Avocado oil
  • ½ onion, chopped
  • 6 cloves garlic, minced
  • ½ can full tomatoes
  • ½ cup beef broth or chicken broth
  • 2-3 Chipotle chilies in adobo sauce
  • 1 tsp. Cumin
  • 1lb. Ground beef
  • Salt (to taste)
  • Cilantro (to taste)
  • ¾ cup Monterey Jack cheese, shredded
  • Deli sliced chicken
  • ½ cup enchilada sauce


  1. Sauté the chopped onion in avocado oil over medium heat until softened. Add the minced garlic and continue to saute until fragrant. Set aside in a small bowl.
  2. In the same pan, add the crushed tomatoes, beef broth, and chipotle chilies in adobo sauce. Season with cumin and bring to a simmer. Let the flavors meld together until bubbly. Remove from heat and transfer to a blender.

    Tip: You can substitute pre-made enchilada sauce for this homemade sauce.

  3. Puree the sauce in a blender until smooth.

  8. Pour the remaining enchilada sauce on top of the enchiladas and spread it out evenly. Sprinkle with remaining Monterey Jack cheese.
  9. Bake at 400 degrees for 15 minutes, or until the cheese is melted and bubbly.
