Keto Chicken Enchiladas Recipe – Ingredients:

  • 24 oz. pre-cooked, store-bought rotisserie chicken
  • Keto Chicken Enchiladas Recipe – Directions:

    1. Remove skin from chicken and shred with fingers or fork.
    2. White Enchilada Sauce:
      2 cups chicken stock

      1/4 cup heavy cream
      1 1/2 tsp chili powder

      1/4 tsp salt
      1/2 tsp black pepper
      1/2 tsp xanthan gum

      5 low carb spinach tortillas

      22-24 ounces cooked chicken, shredded
      8 ounces sour cream
      1 – 4 ounce can mild green chilies, chopped

      1/4 cup pickled jalapenos, chopped

      1/4 cup chopped cilantro
      1/2 tsp cumin
      1 tsp garlic power
      1 tsp onion powder
      1/2 tsp salt
      8 ounces finely grated Mexican blend cheese
      6 slices pepper jack cheese
      16-20 slices of pickled jalapenos
      Oil for dish
      Optional garnish: dried chives

      Serves 8

      438 calories / 28.38g fat / 6.71g net carbs / 35.61g protein
